Cardamom Pistachio Shortbread Cookies

Cardamom and pistachio is match made in heaven. Or I am just exaggerating. Because I love both the flavors.

These cookies are readily available in India in most of the states. Specially, they are available in South of Gujarat state known as Nan Khatai. These are crispy, buttery and has a nice flavor of cardamom. Sometimes, I love to add the ground pistachios in the dough itself or sometimes , roll the formed cookies into the pistachio to add a nice touch and look to it. Its totally upto you.

Recipe for the Cardamom Pistachio Cookies

Ingredients :

1 Cup of All Purpose Flour

1 Stick Butter , at room temperature

3 ounces of granulated Sugar (around 6 tablespoons)

1 tsp of Salt

1 tsp Baking powder

1 teaspoon or less Cardamom Powder

1/3 cup of coarsely or smoothly ground pistachios.

Method:

Take raw shelled pistachios and grind them with a little bit of sugar into a coarse powder.

Remove them and leave it aside.

Take flour in another bowl, add salt, baking powder, sugar, cardamom powder and if you like you can add pistachio in the dough or else leave it aside. Will give you another way to use it. Mix everything with a spoon, and then cut butter into the flour and mix nicely. If you think your dough needs just a little bit of something wet , just add a spoon or so of milk. It depends.

Remove all the dough onto a parchment paper and smooth out. Transfer it into a a large plastic wrap on the counter and form a log. Once the log is formed, open the plastic wrap and , sprinkle the ground pistachio if you haven’t added them earlier in the dough on one side of the log. Roll the log of dough on them and let the log get covered nicely with pistachios.

Wrap it and keep it in the fridge for half an hour or so.

Remove from the fridge and cut them into slices with the help of a knife and place them into a baking sheet.

Bake them at 350 F in a preheated oven for about 10 -14 minutes. Turn the baking sheet after 7 minutes or so inside out.

Once it looks golden in color remove them from the oven and let it cool for about 2 minutes or so in the baking sheet and then remove them onto a cooling rack.

If you cannot wait till they cool down, eat one quickly.

Serve it as it is or over tea. And, if you have guests coming over without early notice then you can pair them with ice cream and serve it to the guest. They are that quick to make. Enjoy.
