Yes, it’s St. Patrick’s day! The day cannot be celebrated without some soda bread. Yesterday while coming from work as I was scrolling through my instagram page; I came across this soda bread recipe, which made me think I have never tried making soda bread. As soon as I went home, I decided I am going to make Irish Soda Bread and luckily I had all the ingredients at home.
I can’t believe it’s already August. I can’t see summer going away slowly. I know still there is time to fall and winter. But, I kind of want to stay back and enjoy summer more. I want enjoy more summer bounty. I haven’t yet had my fill of tomatoes, corn and berries. Time flies so quickly. My niece who was born in December is already 7 months old, in January we were still planning our summer vacation which we took in May to France and Italy. Makes 2 tall glasses
1 cup Plain Yogurt
3 tablespoons honey
1 Teaspoon Lime juice
1 cup Milk (more or less, depending on your preference for the consistency)
1/4 cup Dried fruits or nuts of your choice. Almonds, cashews, pistachios and sultanas are all great. (Soaking the nuts beforehand so that when you are trying to blend them in the lassi it is easier).

Pistachio Pancakes with Rose Butter
I had been thinking about this flavor combination since many days. Initially, I was in the mood to make a cake and fill it with rose cream. But, before I could experiment I thought of trying it in small quantities. I had this perfect opportunity last week when I was home alone and wanted to eat something for breakfast but turned out I made it to lunch. I had prepared some apricot pistachio frangipane tart and had some leftover pistachio frangipane so what is the best use of it then try making pancakes. I used the pistachios we bought from our Greece trip. Oh , I tell you they turned out so good. I felt so happy and content. And, I had perfect lunch of pancakes. Yes, lunch. You can have them for dinner as well.
